Eggplant Lasagna



1 1/4 lbs ground pork
1 egg plant
1 can diced tomatos
8 oz tomato sauce
1 tablespoon diced garlic
1/4 parmesan cheese
1 cup colby and jack cheese
1 diced shallot
2 cups cottage cheese
1 tablespoon old bay seasoning
1 tablespoon italian seasoning
salt and pepper to taste
