Chicken and Eggplant Bake



1 chicken breast
1 lbs eggplant
1/2 cup parmesan cheese
1/2 cup black olives
1 can rotel
1 jar pasta sauce
1 tbsp minced onion
2 tsp italian seasoning
salt & pepper to taste
