Texas Caviar



1 can black-eyed peas
1/8 cup cilantro
1/8 cup EVOO
1/8 cup red wine vinegar
1 garlic clove
1/2 jalapeno
1/4 red bell pepper
1/4 red onion
salt & pepper to taste
