Eggplant Au Gratin with Feta Cheese



This is a Keeper!!

1 eggplant
1 garlic clove
1/8 cup parsley
1 tablespoons breadcrumbs
4 oz feta cheese
5 tablespoons olive oil
1 1/2 teaspoons vinegar
salt & pepper to taste
